I wonder if the problem wouldn't be solved by using a double boiler. Not having my own double boiler (too cheap to get one) I just put a metal mixing bowl over a deep pot of boiling water. Works fine and saves scorching delicate ingredients.

Yes, where else on the web would I find sharing my interest in recipes of this, er, sort.

Of course that neatly manages to mix up both this post and the chocolate sponge. Sigh, forgive me, Christmas eve is always like this for me.
