At the request of misstiajournal, here's the recipe for Banana Butter from Cookery in Colour - the crucial ingredient in the 'Banana Surprise' I posted earlier:

2 oz. butter
1 large banana
squeeze lemon juice

Cream the butter in a basin or on a saucer, and gradually mash the banana into this. Add a squeeze of lemon.
