It's basically bread pudding polished up to shake off associations with waste-not-want-not. Bread pudding is a yummy thing--rather like baked french toast. I usually just smash up bread that has gone hard (a good re-use for a Tyvek shipping bag), crusts and all, and dot a bit of butter on top. It's also good with chocolate chips instead of currants. I've seen it made with brioche, which just seems over the top.

i made a bread pudding a few weeks ago with some leftover croissants. it was luscious! i think brioche bread pudding is an excellent idea, as opposed to throwing the brioche away.
