Grandma Violet's Potato Soup

More from my grandmother. "Rivels" are sort of a cross between a dumpling and a noodle. They are chewy and yummy. We ate this a lot in the winter. It is really satisfying. Also cheap, and vegan.
Potato Soup
1 small onion, chopped
2 celery ribs, chopped
Saute a few minutes and add about 1 quart water and 2-3 cups large diced potatoes. Cook gently and add rivels when potatoes are about half tender. Season to taste with salt, after first adding about 2 Tbsp or less of chicken bouillon powder.
Rivels
1 whole egg or 2 egg yolks
1 1/2 c flour
dash salt
In small bowl beat egg with fork and add flour, stirring with fork until all is separated into small chunks of noodle dough. Do not let it become one ball of dough–it should seem as thought there is too much flour. Sprinkle by hand into boiling soup while stirring. Cook about 6-7 minutes until dough is cooked. May require more water to finish.
For you non-vegans, add some cut-up hot dogs for an extra treat.
